The yellow pea, a legume to rediscover! It is low in fat, rich in carbohydrates, proteins, and dietary fibre, and contributes to the intake of several vitamins and minerals. The protein-rich pea is a major asset, both agronomically and environmentally.

Legumes are excellent alternatives to animal proteins and are often described as flavour sponges.


Serve cooked peas in salads, soups, or stews. They can be added to rice or cooked with spicy Indian vegetables. The yellow pea is nicknamed the "chickpea of Quebec." It is as delicious and nutritious as its cousin, making an excellent hummus.


  1. Soak them for six to eight hours, or overnight, in four times their volume of water (for one cup of peas, use four cups of water). To facilitate cooking, a small tip is to add a bit of baking soda (2 teaspoons for 1 cup of peas and 4 litres of water). This helps soften the skin, making it easier for water to penetrate the pea and thus easing the cooking process.
  2. Drain and rinse them.
  3. Bring to a boil and simmer for about 90 minutes or until they reach your desired consistency.


Keeps for up to a year in its airtight bag, stored in a cupboard or a cool, dry place.
