Crunchy, tangy and slightly sweet, an ageless classic.
Ingredients
- 400 g garlic scapes, ends trimmed
- 625 ml (2 ½ cups) apple cider vinegar
- 250 ml (1 cup) sugar
- 125 ml (½ cup) water
- 1 tbsp salt
- 1 tbsp peppercorn blend, crushed
Preparation
- Coil the garlic scapes to fit them into two 500 ml glass jars. Leave about 2 cm (1 in) of headspace at the top of the jars.
- In a saucepan, combine the vinegar, sugar, water, salt, and peppercorns. Bring to a boil, stirring until the sugar is dissolved.
- Pour the boiling liquid into the jars, ensuring the garlic scapes are completely covered, and let rest for 5 minutes before sealing the jars with lids.
- Let cool completely on the counter, then place in the refrigerator for at least 2 weeks before using the garlic scapes.
- Keeps for up to 1 month in the fridge.
Tournevent Tip: Delicious in salads, sandwiches, burgers, on cheese platters, or as a side for grilled dishes.
