Ingredients
- 250 g (2 cups) garlic scapes, finely chopped in a food processor
- 120 g (¾ cup) onion, finely chopped in a food processor
- ½ hot red chili, seeded and finely chopped (optional) or 2.5 ml hot chili powder
- 60 ml (¼ cup) sugar
- 60 ml (¼ cup) maple syrup
- 60 ml (¼ cup) apple cider or white wine vinegar
- 125 ml (½ cup) water
- 5 ml (1 tsp) salt
- 2.5 ml (½ tsp) mustard seeds
- 1.2 ml (¼ tsp) celery seeds
- 1.2 ml (¼ tsp) ground black pepper
Preparation
- In a saucepan, combine the vegetables and the rest of the ingredients.
- Bring to a boil and simmer over medium-low heat for 20 minutes, stirring occasionally. Add a little water if needed.
- Pour into airtight containers. Let cool to room temperature and refrigerate.
- To preserve, use the method recommended by canning experts, for example, on the Bernardin website.
- Serve with cheeses, in a burger or sandwich, or use to flavor mayonnaise or tartar sauce.
