Houmous de pois jaunes entiers Tournevent

Tournevent whole yellow pea hummus

A delicious alternative to traditional hummus, made with our organic whole yellow peas and our Tournevent organic canola oil. Creamy, nutritious, and rich in plant-based protein, it is perfect as a dip, a spread, or a side dish.

Ingredients

To serve:
Tournevent canola oil, paprika, fresh parsley, or roasted yellow peas.

Steps

1️⃣ Soaking (8 to 12 hours)

Rinse the yellow peas under cold water.
Place them in a large bowl and cover with at least 3 times their volume in water.
Let soak at room temperature for 8 to 12 hours.

👉 Soaking improves digestibility and reduces cooking time.

🌿 Tip – Baking soda soak

For even more tender peas and an ultra-creamy hummus, add ½ teaspoon of baking soda per cup of dried peas to the soaking water.

Baking soda helps soften the legumes' skins and slightly reduces cooking time.

2️⃣ Rinsing

Drain and rinse thoroughly.

3️⃣ Cooking (60 to 90 minutes)

Place the peas in a pot and cover with fresh water (about 5 cm above them).
Bring to a boil, then reduce to low heat.

Let simmer for 60 to 90 minutes, until very tender (they should crush easily).
Salt at the end of cooking.

Reserve a little of the cooking water before draining.

4️⃣ Preparation

In a food processor:

  1. Add the peas while still warm.

  2. Incorporate the tahini, Tournevent organic garlic, lemon juice, and cumin.

  3. Process until smooth.

  4. Gradually add the Tournevent organic canola oil.

  5. Adjust the texture with a little cooking water.

Adjust salt and lemon to taste.

5️⃣ Serving

Serve in a bowl, create a slight well in the center, and add a drizzle of Tournevent canola oil.

🌿 Tournevent Variations

🌱 Hemp version (more herbaceous and rich in omega-3s)

Replace half or all of the canola oil with our organic hemp oil.
Provides a greener and slightly nutty flavor.

🧄 Garlic lover’s version

Use our garlic oil instead of regular oil (or as a blend).
Perfect for a more intense and aromatic version.

🌶 Spicy version

Add a drizzle of our hot chili oil and a pinch of smoked paprika or chili pepper.

Why yellow peas?

Rich in plant-based protein and fiber, the yellow pea is a local alternative to imported chickpeas. It offers a mild texture and a slightly sweet flavor, while highlighting our local agricultural expertise.
